MADISON’S RESTAURANT AND WINE GARDEN
DEBUTS NEW FALL/WINTER MENU

HIGHLANDS, NC- Madison’s Restaurant and Wine Garden, the flagship restaurant of the Old Edwards Inn and Spa is pleased to announce a new fall/winter menu. Inspired by the bountiful flavors of the cooler season, the fall/winter menu presents elevated southern cuisine--a combination of the freshest local and regional ingredients creatively fused with traditional techniques to showcase flavors that are at once innovative yet familiar. Prices for menu items range from $9 to $37.

New dinner menu highlights include:
Starters
Parsnip Custard Cloud with sautéed wild mushrooms, Dry Sherry and fresh thyme
Seared Scallops with grilled fennel and Chardonnay chive cream
Tarragon Scented Veal Sweetbreads with brown butter cauliflower puree, Chanterelle mushrooms and carrot glacé
Beef Short Rib Ravioli with butter lettuce soup and red pepper jelly

Soups and Salads
Duck Confit Bruschetta with Arbequina olive relish, fresh oregano and organic Balsamic vinegar
Roast Butternut Soup with candied butternut and sage chicken quenelle
Stewed Apple and Smoked Trout with candied pecans, Frisée and apple chips

From the Sea
Roasted Maine Lobster with carrot lobster risotto, bourbon pan jus and fried okra
Honey Cardamom Glazed Organic Irish Salmon with grilled onion pepperonade, caviar crème
fraîche and caper berries
Pan Roasted Halibut with Hoshimenji mushroom ragout, preserved lemon and pear tomato

On Land
Slow Roasted Duck Breast with potato leek soufflé, young lettuce salad and white Balsamic glacé
Braised Colorado Lamb with sautéed Brussels sprouts, Yukon Gold mousseline and garlic anchovy sauce
Basted Painted Hills Organic Filet of Beef with creamed arugula, Chanterelle mushrooms and blush reduction
Sweet Potato Agnolotti with spiced consommé, Parmigiano Reggiano and shaved scallion
Seared Veal Tenderloin and Scallops with oven cured tomato, buttermilk polenta, Chanterelles
and tarragon cider jus
Grilled Painted Hills Organic NY Strip with marbled potato, fried okra, and Sauce Marsala
