October 17, 2005 - Madison's Restaurant and Wine Garden unveils new fall menu

HIGHLANDS, NC--Madison’s Restaurant and Wine Garden, the flagship restaurant of the Old Edwards Inn and Spa is pleased to announce a new fall menu. Inspired by the bountiful flavors of the cooler season, the fall menu presents signature Carolina High Country cuisine--a combination of the freshest local and regional ingredients creatively fused with traditional techniques to showcase flavors that are at once innovative yet familiar.

New menu highlights include:
White Sweet Potato Soup with Pear and Red Onion Gastrique
Organic Baby Greens, Pickled Red Onion Vinaigrette, Candied Pecans, Grapes and Fried Sweet Potatoes
Braised Burgundy Escargot, Celery Risotto
Pumpkin Agnolotti, Sage Brown Butter, House-Made Lavender Ricotta
Seared Sonoma Foie Gras on Duck Confit and Apple Hash, Banyuls Vinegar Jus.
Carolina Ruby Trout Almandine, Cauliflower Puree, Parsley Nage
Potato Crusted Halibut, Apple Braised Swiss Chard Timbales, Hazelnut Vinaigrette
Broiled Maine Lobster, Jerusalem Artichoke Gnocchi with Chervil Pesto and Pomegranate Sabayon
Pan Roasted Venison Chop with Butternut and Pear Soufflé and Muscadine Jus
Slow Roasted Duck Breast with Leeks, Gooseberries, and Rutabaga Rosti
Seared Loin of Lamb with Brussels Sprouts, Potato Mousseline, Garlic Chips and
Anchovy Mustard Sauce
