Tomato Panini Beverage Pairings

Pinot Grigio

As I thought about pairings for the Tomato Panini, I immediately thought Pinot Grigio. Then I thought “No, too easy. Let’s be more creative."  After tasting at least a dozen alternatives I decided that the perfect pairing was Pinot Grigio. More specifically the Santi and the Jerman. The Jerman is barrel fermented (virtually unheard of in P.G. circles) and is fleshy, rich, with creamy notes of apple and pear. This turned out to be a near perfect mirror pairing for the Tomato Panini. The Santi, Pinot Grigio with its juicy bright fruit and bracing acidity was a perfect complement the Creamy mozzarella and country ham.

"Terrassess"

The red pairing was less challenging. If I could make a wine to go with the Tomato Panini it would be the Chateau Pesquie “Terrasses”. A bistro style wine, it is both savory and fruity. Understated in style, its fruit and spice blend seamlessly with the Tomato Panini’s ham, tomato and mozzarella as if they were a single element.
